To save Pantone colors, go to the upper right corner of the Recolor Artwork menu and click the New Color Set icon.

If you look at the colors side by side, you will notice that the colors are quite similar. Please note that the colors shown on the screen may differ from those printed. The only way to see how it will look in print is to find the colors in the Pantone color books.
If you convert white from CMYK to Pantone, the result is gray. This is because white does not exist in hardcover Pantone books. This is the color of the paper, so the white surfaces are actually transparent.
